The Jerry Thomas Project – The White Lion

The Jerry Thomas Project is the re-creation of all of Jerry Thomas’ cocktails from Jerry Thomas’ Bar-Tenders Guide: Receipts for Mixing in their purest form. Jerry Thomas is considered America’s father of mixology publishing the first cocktail book in 1862.

Well – good news is that the Catawba wine came.  It is a rosé, which appears to be the only type of Catawba on the market.  Anyhow, I’m not going to open it quite yet – but first take inventory of all the drinks that call for it so that I can hammer them out before the wine oxidizes.  For the meantime, I made the White Lion – which is not white or has anything to do with a lion.  I actually decided to make it because it is almost exactly the same as the Knickerbocker that I made a few days ago.  The only difference is that you use lime juice instead of lemon juice in this recipe.

The White Lion

in modern day measurements

2 ounces Cruzan light rum

1/2 ounce Citronage

2 ounces raspberry syrup

2 ounces fresh squeezed lime

Raspberry syrup recipe

1 cup sugar

1 cup water

1 cups frozen raspberries

Bring ingredients to a boil and immediately pull off.  Let cool and then puree in a food processor.

Equally as delicious as the Knickerbocker – perhaps it would be delish to make a White Lionbocker, where you use both lemon and lime juice to mix the drink.
