<p>So there are only two more days left of the winter cocktail list and then we change for summer.  I always forget how much work it is to change the menu &#8211; but it is really the part of my job that I love the most.  And every time I create a new list &#8211; I just can’t believe how much better it is than the last one.</p>
<p>I’m still working out the tweaks right now, but some of the things I’m most excited about are</p>
<p>1. A dessert cocktail done with a house-made raspberry champagne sherbet and a house-infused vodka which has been steeped with vanilla, chamomile, spearmint, orange blossoms, and blackberry leaves.</p>
<p>2.  A tequila flight with the same tequila but three different house-made salts.  Right now, I’m thinking a citrus salt, a tamarind salt, and a pepper salt.  (Guess I better break out the dehydrator tomorrow.)</p>
<p>3.  A happy hour drink with chamomile lavender gin and five mixed fruit juices.  Gin and Juice.</p>
<p>4.  Some of my own cold-compress liqueurs.</p>
<p>5.  A section devoted completely to Jerry Thomas’ drinks (and the Jerry Thomas Project &#8211; which I haven’t forgotten about, I’ve just been busy on other projects)</p>
<p>There’s a heap of other stuff, but I haven’t done the final menu so I want to wait until it’s done.</p>
<p>What’s crazy is all the stuff I still have to do, even though almost all of the infusions are done.  But I still need to make syrups, purées, and any new tinctures.  I need to make a recipe for every new ingredient.  I have to make a recipe for every new drink (so that the bartenders can learn how to make them).  I have to make a cheat sheet to hang up next to the bar, so at first the other bartenders can work until they’ve memorized the new drinks.  I have to put all the drinks in the computer.  I have to change and reprint three different menus.  I have to change the prep list and the kitchen order list.  Then I have to take part of the day to go over all the changes with the staff, taste them on the new drinks, and answer any of their questions.  And even then &#8211; it will still need tweaks.</p>

I also got a bag of gum arabic &#8211; so I can make some true gomme syrup. I overhauled the cocktail list for fall &#8211; still want to do a couple of tweaks such as add a deconstruced hot toddy but for the most part I feel this is the best cocktail list I&#8217;ve done yet (although I always feel that way when I put the new one out). I wasn&#8217;t going to do a pumpkin martini as I felt it was a bit cliche this time of year, but I got so many requests that I relented and man am I glad I did. It came out absolutely delicious and really tastes just like a pumpkin pie.</p>
